Turkey Greens Soup – The New Mistake?

In the meantime, let’s talk about what started this blog since today is our 12 year anniversary and Pi Day!

The foods.

Over the years, I created some great recipes, and not so great. It’s par for the course. One thing that makes me different from other parent/food bloggers is I’m not going to lie to you about failed foods. We are getting two recipe entries today. One everyone loved. The other my mom and I loved, but Child 1 said “maybe a different meat”. In his defense, we have been eating A TON of chicken lately.

Today, we are discussing Turkey Greens Soup.

Now, there is a story to go with this recipe. Normally I HATE blogs that don’t get to the recipe, but this story is the reason the recipe was created. In the moment, I was pissed, but looking back at the events to create this dish, it has CSM written all over it.

Picture it. Sunday Night, 2026.

If you are a long time reader, you know I normally plan out my meals for the months, but due to life we have fell off that horse, hard. I’m working on getting back on track, but no problem right?! I decided and told my mom and the crew “spaghetti for dinner”. I work on Sundays evenings, so either I prep dinner the night before, or something this easy I let them cook.

I left to work, and was out doing my job and get a frantic call from Child 2.

“Do you know where Child 3 is?”

In a perfect world the answer would be yes, but with this one, and me being gone to work, ya girl knew nothing. I was focused on work. Well, apparently, my mom couldn’t find spaghetti sauce, so she improvised and made burgers with the ground turkey. No problem, right?!

Wrong.

My mom used cookie sheets to bake the burgers, and add a layer of olive oil to the pans to make sure the burgers didn’t stick. Problem? You guessed it, the oil dripped into the bottom of the oven, almost causing a fire. Child 2 woke up to a smoke filled house with Yoshi going bonkers and just confused.

I talked her through the situation and got back to work. I was a hot mess and of course I was second guessing everything driving back home. When I got home it seemed ok, but that infamous burnt smell was still lingering. I looked at the burgers, and they weren’t brunt at all, but I was more curious of what to do with them.

Crockpot it is.

I took the burgers, that was seasoned with garlic salt, pepper, red peppers, green peppers and onions and dumped them in the crockpot. I cut them up in meat chunks. Then I added my Glory mixed greens and some beef broth I add in the cabinet. Turned it on and walked away. That next day, I then added egg noodles to the mix and turned it on low to cook into the mix.

Here’s the result, and let me tell you, NO ONE COMPLAINED. We have adjusted a lot in the house with me working and going to school outside the house, but one thing that with not ever change is using a crockpot.

Bonus: all the ingredients can be bought at Aldi except the greens. I bought those at Walmart.

Turkey Greens Soup

3 pounds Ground Turkey

1 bag Frozen Peppers and Onions

Lawry’s Garlic Salt and Black Pepper to taste

1 can Glory Mixed Greens

1 box Beef Broth

4 cups water

1 bag Egg Noodles

(Change in directions so you don’t attempt to burn you house down)

Brown ground turkey, peppers, and onions in a pan. Once done ad that mix to the crockpot with greens, seasonings, water and beef broth. Cook on high for 4 hours. Once the 4 hours is up, add egg noodles and cover for another hour or until noodles are cooked.

Sometimes, mistakes are made and geniuses are created.
