Ok, I’m back, feeling more rested, but the back still doesn’t like me, and that’s ok, I’ll fix that in thirty minutes.
With that said, We have a favorite method of mine during the winter! Crockpot! I figure by the time winter is done, I may break this one, and have to purchase a new crockpot. I think I go through these like my kids go through cereal and milk. It easy to use, and no fuss once you get everything together.
This week, I made pot roast in the crockpot. I change up the marinade to do different flavors, and I love buying the pre marinade packages at the store and adding to it to make the roast better than what it would have been.
Today, I decided to use some of my fruit that I noticed was getting a little bruised, but was still good. Kicker to tis recipe? I made this the night before, and cooked it in the crockpot today. Took maybe 15 minutes to throw together, and walk away…..
Fruit Marinated Pot Roast with Rice and Biscuits
1 3-5 pound boneless chuck roast
3 small oranges, sliced
1 lemon, sliced
1 cup pineapple orange juice
1 cup Malibu rum
1 cup brown sugar
3 tbsp. worcestershire sauce
3 tbsp. soy sauce
2 cups water
Combine the ingredients in a bowl. Let sit in the refrigerator for at least 8 hours. The longer, the better. I cooked mine on low all night, checking on it occasionally to make sure I didn’t burn the meat, and added 2 more cups of water before bed.
Once done, I turned it to the option of ‘keeping warm’, and took some the juices out of the crockpot, and poured them into a pan. I began to make a gravy for the meat with 4 tbsp. flour and 1 tbsp. butter.
In the meantime, I began my rice and biscuits. The kids love basmati rice over long grain, but either works. Cook according to directions, and add beef bouillon cube and/or powder to the rice while it cooks. Bake your biscuits according to the directions as well. I use Pillsbury honey flavored biscuits or Southern Style.
You have cooked your dinner in less than 30-45 minutes. I made corn to go with the dinner as well, because you need veggies!
